Easy Microwave Carmel Corn in 15 Minutes

8 quarts popcorn, about 1 cup unpopped
1 cup brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
You will also need:
1 large brown paper bag
Place the popped corn is a large bowl. In a microwave safe bowl combine remaining ingredients except vanilla and baking soda and microwave on high for 2 minutes. Stir to incorporate all the butter and microwave another 2 minutes. Working quickly stir in vanilla and baking soda. Pour sugar mixture over pop corn and stir. Transfer to paper bag. Roll down top of bag and shake vigorously.
Place bag in microwave for 30 seconds. Shake bag vigorously. Repeat 3 more times. Immediately dump on clean counter.
Caution: Mixture is very HOT! Allow to cool and store in airtight container.
Variations:
Add 1 cup of peanuts
Add 1-10oz. pkg of Milk Duds
Instead of popcorn use cereal and pretzels
